Yummy cookies chock full of nutrients. These cookies will give you energy, keep you full and taste great.
Ingredients
- 1/2 cup maple syrup
- 1/4 cup brown sugar or coconut sugar
- 1 1/4 tsp. baking soda
- 1/4 cup melted coconut oil
- 2 chia eggs (6 tbsp chia and 6 tbsp water, let sit for 5 minutes)
- 2 tsp vanilla
- 1 cup peanut butter (or favorite nut butter)
- 3 cups rolled oats
- 1/4 cup flax seed meal
- 1 cup vegan chocolate chips
- 1/4 cup cacao nibs
- Optional: 1 tsp moringa powder
Instructions
- Preheat oven to 350
- In a large mixing bowl combine maple syrup, brown sugar, baking soda and coconut oil
- Add chia eggs, vanilla, (moringa) and mix well
- Stir in oats, peanut butter, flax seed meal, chocolate chips and cacao nibs.
- Round dough into balls and place on greased or parchment lined cookie sheet
- Bake for 10 minutes or don't and eat raw
