Yummy cookies chock full of nutrients. These cookies will give you energy, keep you full and taste great.

Ingredients

  • 1/2 cup maple syrup
  • 1/4 cup brown sugar or coconut sugar
  • 1 1/4 tsp. baking soda
  • 1/4 cup melted coconut oil
  • 2 chia eggs (6 tbsp chia and 6 tbsp water, let sit for 5 minutes)
  • 2 tsp vanilla
  • 1 cup peanut butter (or favorite nut butter)
  • 3 cups rolled oats
  • 1/4 cup flax seed meal
  • 1 cup vegan chocolate chips
  • 1/4 cup cacao nibs
  • Optional: 1 tsp moringa powder

Instructions

  1. Preheat oven to 350
  2. In a large mixing bowl combine maple syrup, brown sugar, baking soda and coconut oil
  3. Add chia eggs, vanilla, (moringa) and mix well
  4. Stir in oats, peanut butter, flax seed meal, chocolate chips and cacao nibs.
  5. Round dough into balls and place on greased or parchment lined cookie sheet
  6. Bake for 10 minutes or don't and eat raw
